The Manager of Dietary and Bistro is expected to provide tasty and nourishing food to residents, guests and employees through high quality service in a cheerful, timely manner. Expected to communicate, coordinate and cooperate with others to attain goals. Generate strong customer /administrator satisfaction through quality food, positive financial results, and a positive public impression.

Essential Duties and Responsibilities:

Operational Needs:

Develop and implement operational guidelines including effective menu planning, recipes, and portion control to ensure consistency in quality of service

Identify vendors and suppliers to provide appropriate food and equipment required; oversee purchasing of all supplies

Produce and/or supervise production of all food items daily

Plan for the logistics of providing food service at more than one location

Manage catering function and requests

 

Staffing:

Determine staffing levels required to meet the dietary / bistro requirements

Ensure staff are cross trained with regard to operational procedures, health and safety issues and sanitation with the goal of creating an effective and efficient operation and work environment

Coach and mentor staff to encourage them to perform at their highest level; participate in annual performance reviews; participate in the hiring process

Establish staffing schedules to ensure patient needs are met while adhering to budgetary guidelines

 

Administrative:

Create food production / utilization reporting including leftover foods.          

Assist with the development of a budget; analyze and monitor costs for fiscal control, monitor receivable,   payables and cash; provide appropriate reporting for Medicare reimbursement and financial reports.

Education / Certification 

    • High School Diploma or GED required; Bachelor of Science in dietary/nutrition, business management or closely related field preferred.
  • Experience

 

  • Minimum of five (5) years in institutional/commercial food operation in a capacity with increasing food service supervisory responsibilities.
